High Protein Shakshuka

High-Protein Shakshuka (Serves 1)

Ingredients
- 1 tsp olive oil
- ¼ onion, finely diced
- 1 clove garlic, minced
- ½ red pepper, diced
- 200g chopped tomatoes (or ½ can)
- 1 tbsp tomato paste
- ½ tsp smoked paprika
- ½ tsp ground cumin
- Pinch of chilli flakes (optional)
- Salt and black pepper, to taste
- 2 eggs
- 1 scoop SAVR Napoletana
- Fresh parsley or coriander, chopped
- Crumbled feta (optional)
- Toasted sourdough or pita, to serve (optional)
Method
- Heat the olive oil in a small frying pan over medium heat. Add the onion and pepper, cooking for 4–5 minutes until softened. Stir in the garlic and cook for 1 minute.
- Add the tomato paste, smoked paprika, cumin and chilli flakes. Cook for 30 seconds until fragrant.
- Pour in the chopped tomatoes and season with salt and pepper. Simmer for 5–7 minutes until the sauce has thickened slightly.
- Remove the pan from the heat. Whisk 1 scoop of SAVR with 2–3 tablespoons of warm water until smooth, then stir it into the tomato sauce until fully combined. Add more water to achieve desired thickness.
- Return the pan to a low heat. Make two small wells in the sauce and crack an egg into each. Cover with a lid and cook for 5–7 minutes, or until the eggs are cooked to your liking.
- Finish with fresh parsley or coriander and crumbled feta, if using. Serve immediately with toasted sourdough or warm pita.
